- 1 cup cherries, pitted and chopped
- 1 cup mascarpone cheese
- 1 cup heavy cream
- 1/2 cup sugar
- 1/2 cup amaretto liqueur
- 1 package ladyfinger cookies
- 1 cup strong coffee, cooled
- Cocoa powder for dusting
- Chocolate shavings for garnish (optional)
Instructions
- Whip cream and sugar in a bowl until soft peaks form. Fold in the mascarpone cheese until well combined.
- Mix the chopped cherries with the amaretto liqueur. Let them mingle for a few moments.
- Prepare each ladyfinger by dipping them briefly in the cooled coffee. Layer them in a serving dish.
- Build half of the mascarpone mixture over the ladyfingers, then layer half of the cherry mixture on top.
- Repeat the process with the remaining ladyfingers, mascarpone, and cherries.
- Dust with cocoa powder and sprinkle chocolate shavings if desired.
- Chill for at least 4 hours or overnight before serving.
Notes
For best flavor, make a day in advance. Use fresh cherries if available, but frozen can be used as a substitute. Be gentle when folding in the mascarpone.
